Works

Here's a simplified explanation of how freeze-drying works: First, the food is frozen at extremely low temperatures, much colder than your home freezer. Then, it goes into a special machine called a freeze dryer. Inside the freeze dryer, the frozen food is placed in a vacuum chamber.

Now, you might be wondering, what's a vacuum chamber? Well, it's a space with very little air or pressure. By lowering the pressure inside the chamber, the freeze dryer creates a unique environment where something interesting happens: the frozen water in the food goes from a solid directly to a gas without becoming a liquid first. This process is called sublimation.

As the pressure drops and the temperature slowly rises, the frozen water molecules in the food turn into gas and escape from the food. This happens because the freeze dryer gently heats up the frozen food, allowing the ice crystals to transform into vapor. The vapor is then drawn out of the chamber, leaving behind freeze-dried food that is dry, lightweight, and still full of flavor.

Since the water was removed during the freeze-drying process, the food is ready to absorb water and return to its original state.
